Amazingly easy to make, these oatmeal pancakes are great to make ahead and reheat for grab and go breakfasts during the week!...if they last that long.
  • ¾ cup rolled oats
  • ¾ cup milk
  • ½ cup flour
  • 2 teaspoons baking powder
  • 2 Tablespoons sugar
  • 1 egg
  • 2 Tablespoons melted butter
  • ½ teaspoon salt
  1. Pour milk into the oats, let sit for 5 minutes
  2. Mix flour, baking powder, and salt
  3. Add sugar and egg to the oats, then add butter
  4. Add sugar mixture to the flour mixture, stir
  5. Cook them like you always cook pancakes. I make them 3 – 4” diameter. It’s really good to double the batch size and cook up a whole bunch of them. If you let them cool then you can stack them up in a big yogurt container and reheat during the week as needed. They’re really good made into “sandwiches” with peanut or almond butter and jam!!
